So Easy.. too good
I love this quiche recipe. It's so quick and easy and tastes amazing.
Make it for a Saturday morning breakfast or add to your brunch recipes when friends come over. Even for dinner with a small salad it's wonderful.
And it's such a clever recipe. It forms it's own crust while baking.
Here goes...
3 eggs
1/2 cup biscuit mix
1 1/2 cups milk
1/4 teaspoon salt
dash of pepper, freshly ground
1 cup swiss cheese, shredded (or any cheese is lovely like cheddar.. but please grate your own... it's a whole different taste when you do)
1/2 cup smoked ham, cooked and cubed (or get some at the deli, roll up and cut into little bites... works perfectly fine)
Preheat oven to 350 degrees. Grease a 9-inch pan. Place all ingredients except cheese and ham in a blender, and blend well. Pour mixture in pan. sprinkle with cheese and ham on top. Press gently. Bake for 45 minutes. Test for doneness (slightly firm, golden on the top). Let stand 10 minutes before cutting.
