Apple Bread

Guess how much scrapbooking I've done?  None!  I can laugh at myself for sure.  It takes an earthquake to motivate me to do it!  Mabybe I need to put on some music and decide to work for a set number of songs each day.  (I'll start with one and work my way up!)  :)

Been baking a lot lately; mostly every day.  My excuse is that I 'have to' for Abigail; which I do but not every single day.  But the smells in the house this time of year... ahh!  As soon as whatever I make cools I slice and  wrap with plastic wrap individually, freeze on a cookie sheet, and then take out and bag for the freezer.  That way we always have 'home baked goods' (as Anna calls them) for whatever we need them for.  Sometimes I put a 'home baked good' in a lunch box (already individual wrapped and frozen and and thaws by lunch time).  And sometimes I add a few to my little dessert table for nighttime tea with Scott.  Either way we are never lacking for treats around here.  Baking is my biggest procratination. 

This apple bread recipe is from this mini idea/cookbook by Mary Engelbreit.  And so yummy!

Beat 3/4 cup coconut oil with 1 cup brown sugar and 2 eggs. Stir in 1 1/2 cup chopped, unpeeled apples, 1/4 cup chopped walnuts and 1 tablespoon grated lemon zest, if you like. Sift together 1 1/2 cup flour, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1 teaspoon baking soda, and 1/4 teaspoon salt. Add to apple mixture. Do not overmix. Pour inot a greased loaf pan. Bake at 350 degrees for 55 to 60 minutes.

  1. Oh Tara...this sounds wonderful! I can almost smell it baking now. I agree with you about the smell of autumn baking. Nothing beats it! Havd a great evening. Oh and I have yet to start my scrapbooking either : )

  4. Oh that apple bread looks yummy! I might have to try it! I've been baking a lot lately, too! I think it is just that time of year- almost fall!
