This dinner is a quick and yummy favorite in our house throughout autumn. I love cooking food that involves pumpkin and pumpkin spice this time of year, and this has both!
~ served on your favorite toasty buns with a side of sweet potato fries and we like green beans too ~
1 1/2 lbs ground turkey
1 onion, chopped (or onion powder)
12 oz bottle chili sauce
1/2 cup canned pumpkin
10 oz can tomato soup (or I just use tomato sauce)
1 T pumpkin pie spice
1 t salt
1 t pepper
Brown turkey with onion in a skillet over medium heat. Drain; stir in remaining ingredients. Reduce heat; cover and simmer, stirring occasionally, for one hour (I've simmered for as short as 25 minutes when I'm pressed for time).
It will smell just like fall is supposed to smell in your kitchen. My girls love this meal, we all do. In fact last night Abigail asked it we can substitute our tradition of "Tricker Treater Taco Soup" this Halloween for these Pumpkin Joes. Just might!
