I wish I had a picture but by the time I thought of it the bowls were gone. This is supposed to serve 8 to 10 but in our house it only serves 3 (daddy doesn't really like chocolate). This is from Deceptively Delicious: simple Secrets to Get Your Kids Eating Good Foods
You'll need:
1/4 cup trans-fat-free soft tub margarine spread
1 cup avocado puree (1 avocado) Make sure it's ripe. Peel, put in blender or food processor until creamy
1 cup (maybe a little more) confectioners sugar
1/2 cup unsweetened cocoa powder (baking aisle)
1 teaspoon pure vanilla extract
1/4 cup cornstarch
Do this:
In a medium saucepan, melt the margarine over low heat. Stir in the avocado puree, sugar, cocoa powder, and vanilla. Cook mashing well with a silicone spatula to smooth out any lumps of avocado, until the mixture thickens, 3 to 4 minutes. (low heat) Off the heat, gradually stir in the cornstarch. Serve warm.
It doesn't save well. Gets weird in the refrig, so make it when your plan on serving it all at once. I could eat the whole batch myself.
