I love this dinner. It's quick and easy. Everyone loves it. It makes it's own 'sauce' as it cooks. It has fresh ingredients. It's perfect for a weeknight for us.
Ingredients:
12 oz linguine (we did shells that night because we had shells)
12 oz (one mini box) of cherry or grape tomatoes halved
1 onion sliced
4 cloves garlic (I use the kind already cut up in the little jar, just sayin)
1/2 teaspoon red pepper flakes (optional)
fresh basil (just rip of a bunch and throw it in)
2 Tablespoons (or just two really long glugs) of really good olive oil
Course salt and freshly ground pepper
4 1/2 cups water
Freshly grated Parmesan cheese
Combine everything, yup, everything in a skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
Season with salt and pepper, divide into bowls, garnish with oil and Parmesan.
