Banana Chocolate Cream Sandwiches

From a cookie cookbook dated from my Mom and given to Scott just two years after we were married:

Cookie Ingredients
1 cup granulated sugar
1 cup butter
1 very ripe banana
1 teaspoon vanilla
2 1/3 cups flour


Filling Ingredients
4 cups powdered sugar
1/3 cup butter
5 Tablespoons milk
3 Tablespoons unsweetened cocoa (baking powdered cocoa)
1 teaspoon vanilla
1/4 teaspoon salt

Heat oven to 350. In a large mixing bowl, combine 1 cup granulated sugar, 1 cup butter, the banana and 1 teaspoon vanilla. Beat at medium speed until light and fluffy.

Add flour. Beat at low speed until soft dough forms.

Shape dough into 1 inch balls. Place balls on uncreased cookie sheets.

Flatten the balls to 2 inch circles with the bottom of drinking glass, dipping glass in granulated sugar to prevent sticking.

Bake for 12 minutes or until edges are light golden brown.

Cool completely.

In medium mixing bowl, combine filling ingredients. Beat at low speed until smooth

Spread about 2 teaspoons (we like more of course) on bottoms of half of cookies. Gently press bottoms of remaining cookies against filling to form sandwiches.
