After School Snack

Coconut Mango Smoothie
(tastes so good it's like you're in Hawaii, almost)

16 oz pkg frozen mango (or fresh is you have one) (you'll only need half for one recipe)
14 oz coconut milk
2 T honey
2 T unsweetened flaked coconut
1 t vanilla extract

Place half the mangos in a blender; reserve remaining mangos for another recipe.  Add remaining ingredients to blender; process until smooth and creamy, about 30 seconds.  If consistency is too thin, add in a few extra frozen mango chunks to thinken.  Serves 2
